Wonton Salad

Prep Time

Ingredients

  • 2–4 chicken breasts
  • 1 bunch green onions
  • 1 head lettuce
  • 1 can water chestnuts
  • 1/2 package wonton wrappers
  • Oil
  • 1/4 cup rice vinegar
  • 1/2 cup vegetable oil
  • 4 Tbsp sugar
  • 1/4 cup sesame seeds
  • 1 tsp salt

Instructions

  1. In a salad dressing container, combine rice vinegar, vegetable oil, sugar, sesame seeds, and salt. Then refrigerate.
  2. Cook chicken breasts and dice or shred. Then refrigerate.
  3. Heat oil in a frying pan. Fry the wonton wrappers on both sides until golden brown. Let rest on a paper towel.
  4. Shred lettuce. Chop green onions. Slice water chestnuts. Then combine the three.
  5. Crush the fried wonton wrappers. Combine with the greens, chicken, and salad dressing and serve.

Banana Bread

Prep Time

  • 1 hour to cook

Ingredients

  • 1 cup sugar
  • 1/4 cup shortening
  • 1 egg
  • 3 Tbsp milk
  • 3 overripe bananas
  • 2 cups flour
  • 1 tsp baking soda
  • 1 rounded tsp baking powder
  • 1 tsp cinnamon – optional

Instructions

  1. Preheat oven to 350°.
  2. Cream together shortening and sugar. Add egg and milk and cream again.
  3. Mash bananas. Then combine with mixture.
  4. Add flour, baking soda, baking powder, and cinnamon and mix.
  5. Grease and lightly flour a bread pan. Pour mixture into pan and bake for 45 minutes to an hour or until toothpick inserted in the center comes out clean.

Chuck Wagon Stew

Prep Time

Ingredients

  • 2 lbs stew meat
  • 2 Tbsp shortening or oil
  • 4 cups water
  • 1 tsp Worcestershire sauce
  • Garlic salt to taste
  • *1 medium onion
  • 1 Tbsp salt
  • 1/4 tsp pepper
  • 1 tsp sugar
  • 6 carrots
  • 3 potatoes
  • 3 Tbsp flour
  • 3/4 cup water

*Can substitute onion with onion powder

Instructions

  1. Brown meat in shortening or oil, salt, pepper, and garlic salt.
  2. Add water, Worcestershire sauce, onion, and sugar. Simmer for 2 hours.
  3. While the meat is simmering, peel and cut potatoes and carrots. Add carrots and potatoes after 2 hours and cook until done.
  4. In a separate bowl, combine flour and water until there are no lumps. Pour mixture into the stew pan and simmer until the sauce thickens.

Crud (Ensign Shepherd’s Pie)

Prep Time

Ingredients

  • 1 lb ground beef
  • 1 can tomato soup
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1/2 cup cheese
  • 1 can corn
  • Mashed potatoes
  • Additional shredded cheese

Instructions

  1. Preheat oven to 350°.
  2. Brown meat in frying pan and drain. Mix meat with tomato soup, milk, salt and pepper, and 1/2 cup shredded cheese.
  3. Spread hamburger mixture evenly in a 9×13 pan. Then layer drained corn, mashed potatoes, and cheese.
  4. Cook for 30 minutes and serve.

Shelley’s Pot Roast

Ingredients

  • Pot roast
  • Salt and pepper to taste
  • Shortening or oil
  • 1 cup water
  • Potatoes (cut)
  • Baby carrots
  • Onion (cut)

Tools

Instructions

  1. Heat oil or shortening in pan. Salt and pepper meat to taste and brown on all sides.
  2. Add 1 cup water, potatoes, onion, carrots, and potatoes. Simmer for 2–3 hours.

Chex Mix

Prep Time

Ingredients

  • 9 cups assorted chex cereal
  • 1 cup pretzels – optional
  • 1 cup bagel chips – optional
  • 1 cup nuts – optional
  • 6 tbs Margarine
  • 2 tbs Worcester sauce
  • 1 1/2 tsp seasoned salt
  • 3/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 cups assorted M & Ms

Instructions

  1. Melt the butter, seasonings and Worcester sauce in the microwave
  2. Pour the seasoning mixture over the chex in the large mixing bowl and stir until evenly coated
  3. Microwave the seasoned chex mixture for 5-6 minutes stirring every 2 minutes.
  4. Spread on paper towels and cool
  5. Add in the M & Ms into the cooled chex mixture

  • 1/4 cup butter
  • 1 tsp vanilla

Instructions

  1. Melt the butter, peanut butter and chocolate chips in the microwave, stirring every 30 seconds until smooth

  4. Add the powdered sugar and mix until evenly coated

Instructions

  1. Start heating oil in a fryer or pan.

Instructions

  2. Cream together shortening, butter, sugar, and brown sugar. Add in eggs and vanilla and cream again.

  5. Roll dough into balls and place on greased pan. Bake for 8–10 minutes or until golden brown.
